Ingredients:

1 can (19 ounces) chickpeas, drained
2 green onions, chopped
3 cloves garlic, chopped
¼ cup fresh lemon juice or the juice of 1 lemon
¼ cup natural peanut butter
½ cup low-fat plain yogurt
½ teaspoon ground cumin
½ teaspoon sea salt
pepper to taste

Mashed Cauliflower

2 Heads Fresh Cauliflower
2 Tablespoon butter

Cut cauliflower into spears, cutting off bottom tips of spears. Cover and cook in small amount of water about 10 minutes, until tender. Mash with a potato masher. Add the butter on top and serve. Serves 6

Grilled Salmon

2 Tbsp olive oil
1/4 c onion, chopped
1 tsp ginger, grated
1 tsp garlic, minced
2 Tbsp Soy sauce or Tamari
1/8 tsp fresh ground pepper
1/2 tsp paprika
1 lb salmon fillets

Chinese Long Beans with Garlic

1 Tablespoon olive oil
1/2 small onion, sliced thin
1 pound green beans, cut into 3 inch lengths
4 cloves garlic, minced
1/4 cup water
2 Tablespoon soy sauce
1 teaspoon fresh ground pepper

Saute' the onion and garlic in skillet. Add the green beans, stir fry until slightly soft and browned in spots. (about 5 minutes) Add the water, cover and cook until water is evaporated and the beans are soft. Add the soy sauce and pepper. Serves 4 Continue
